A simple but filling meal made with potatoes, sausage, onions, and cheese baked into a pie. Great for a cozy family meal or a potluck.

Ingredients: 4 potatoes, thinly sliced. 1 lb sausage, cooked and crumbled. 1 onion, thinly sliced. 1 cup shredded cheddar cheese. 1/2 cup milk. Salt and pepper to taste.

Instructions: Preheat oven to 375F 190C. Layer half of the sliced potatoes in a greased pie dish. Sprinkle half of the cooked sausage and sliced onions over the potatoes. Repeat the layers with remaining potatoes, sausage, and onions. In a small bowl, mix together milk, salt, and pepper. Pour the milk mixture over the layered ingredients in the pie dish. Top with shredded cheddar cheese. Cover with foil and bake for 45 minutes. Remove foil and bake for an additional 15 minutes or until potatoes are tender and cheese is bubbly. Let it cool slightly before slicing and serving.

Cook Time: 60 minutes

Happy Pi Day! We had potato pie for dinner and cherry pie for dessert! I used a homemade crust from the freezer for the savory pie but I bought the cherry pie crusts from @markethallfoods. I just didn’t have time today to make them. I did make the cherry filling from scratch using frozen cherries and a recipe from @sallysbakeblog. It was all delicious.
