This Quinoa and Veggies Lunchbox Power Salad is a nutrient-packed meal that's perfect for lunch. It's loaded with protein from quinoa, and packed with colorful vegetables, feta cheese, and Kalamata olives for flavor. The zesty dressing ties it all together for a satisfying and healthy meal.
Ingredients: 1 cup quinoa. 2 cups water. 1 cup cherry tomatoes, halved. 1 cup cucumber, diced. 1/2 cup red bell pepper, chopped. 1/2 cup yellow bell pepper, chopped. 1/4 cup red onion, finely chopped. 1/4 cup fresh parsley, chopped. 1/4 cup feta cheese, crumbled. 1/4 cup Kalamata olives, pitted and sliced. 1/4 cup extra-virgin olive oil. 2 tablespoons lemon juice. 1 garlic clove, minced. Salt and pepper to taste.
Instructions: Rinse quinoa thoroughly under cold water. In a medium saucepan, bring 2 cups of water to a boil. Add quinoa, reduce heat to low, cover, and simmer for 15-20 minutes until all the water is absorbed. Remove quinoa from heat, fluff with a fork, and let it cool to room temperature. In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, red and yellow bell peppers, red onion, and fresh parsley. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and pepper to make the dressing. Pour the dressing over the salad and toss to combine. Gently fold in the crumbled feta cheese and sliced Kalamata olives. Chill the salad in the refrigerator for at least 30 minutes before serving.
