Ingredients: 4 chicken thighs, bone-in, skin-on. 1 can 14 oz artichoke hearts, drained and quartered. 1 lemon, thinly sliced. 3 cloves garlic, minced. 2 tbsp olive oil. 1 tsp dried oregano. 1/2 tsp dried thyme. Salt and pepper, to taste.
Instructions: Preheat the oven to 400F 200C. In a large bowl, toss the chicken thighs, artichoke hearts, lemon slices, minced garlic, olive oil, oregano, thyme, salt, and pepper until well combined. Arrange the chicken thighs, artichoke hearts, and lemon slices in a single layer in a large oven-safe skillet or baking dish. Roast in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165F 75C. Remove from the oven and let it rest for a few minutes before serving. Garnish with fresh herbs if desired, and enjoy!
