Pumpkin Zucchini Bread/ Cake
If you can't decide between pumpkin bread and zucchini bread, make this recipe and have both at the same time. Recipe yields 2 pans.

It's a perfect transition from summer to fall recipe! I've already gone through 3 giant cans of pumpkin puree this season, yet I still had zucchini in my fridge. I've been wanting to make a zucchini based dessert for a while, like these zucchini brownies, or this zucchini coffee cake. But when I saw this recipe, it was a done deal.
Chocolate Swirled Zucchini Bread:
1 ½ cups all-purpose flour
1 ½ cups whole wheat flour
1 ½ tbsp pumpkin pie spice
1 tsp salt
1 tsp baking powder
3 eggs
2 ¼ cup splenda (or sugar)
½ cup unsweetened apple sauce
½ cup pumpkin puree
1 tbsp vanilla (I actually forgot to add this, and the bread still tasted great, but vanilla never makes anything worse so if I make it again, I'll add it)
2 ½ cups shredded zucchini
¾ cup semi-sweet chocolate chips
Preheat oven to 350F. Mist a 9x5 loaf pan with cooking spray.
In a medium bowl, whisk together flours, salt, pumpkin pie spice, salt, baking soda, and baking powder. Using an electric mixer, beat together eggs, splenda, applesauce, pumpkin and vanilla until combined and smooth. Stir in zucchini.
Pour half of the batter into the loaf pan. Melted 1/2 cup of chocolate chips in the microwave for 30 second intervals, stirring after each, until melted and smooth. Spread the chocolate over the batter. Pour in remaining batter. Top with remaining chocolate chips (or melt, and swirl on top; your choice!)
Bake for 35-50 minutes (I kept mine in for 50). A toothpick should come out clean. Let cool before slicing.

I slice my bread, individually wrap each slice in plastic wrap, and store in the freezer. My freezer currently has 3 loaves of bread in it (not to mention frozen granola bars, muffins, scones, whole wheat rolls, and pretzels). Heat up for 30-60 seconds in the microwave, and enjoy!
