These Mini Turtle Pumpkin Cheesecakes Crepes are a great way to enjoy the tasty flavors of pumpkin, cream cheese, and caramel. They are the perfect fall dessert because they are both sweet and savory.
Ingredients: 1 cup all-purpose flour. 2 tablespoons granulated sugar. 1/4 teaspoon salt. 1 1/2 cups milk. 2 large eggs. 2 tablespoons unsalted butter, melted. 1/2 teaspoon vanilla extract. 1/4 cup pumpkin puree. 1/4 cup cream cheese, softened. 2 tablespoons brown sugar. 2 tablespoons chopped pecans. 2 tablespoons chocolate chips. Caramel sauce for drizzling.
Instructions: Put the all-purpose flour, granulated sugar, and salt in a bowl and mix them together. Mix the milk, eggs, melted butter, and vanilla extract in a different bowl using an electric mixer. Mix the wet and dry ingredients together slowly while whisking them together. Split the crepe batter in half, making two equal parts. Add the pumpkin puree to one part and mix it in well. Add the softened cream cheese and brown sugar to the other half and mix until smooth. Put a nonstick skillet over medium-high heat and use cooking spray or butter to lightly coat it. Add a little pumpkin crepe batter to the pan and swirl it around to cover the bottom evenly. Cook the crepe for one to two minutes, or until it's set and the bottom is just barely brown. It needs to be cooked on the other side for another minute or two. Do it again with the batter for the cream cheese crepes. Stack the crepes on a plate to serve. Put chocolate chips and chopped pecans on top of the cream cheese crepe. Spread the pumpkin filling on one half of each crepe and the cream cheese filling on the other half. Fold each crepe in half to make a half-moon shape. Pour caramel sauce over the crepes that have been folded. Take a bite of your warm Mini Turtle Pumpkin Cheesecake Crepes and enjoy them!
