Ingredients: 12 cups popped popcorn. 1/2 cup unsalted butter. 1 cup brown sugar, packed. 1/4 cup light corn syrup. 1/2 teaspoon salt. 1/4 teaspoon baking soda. 1/2 teaspoon pumpkin spice. 1 teaspoon vanilla extract. 3 cups mini marshmallows. 1 cup candy corn. 1/2 cup chopped pecans optional.
Instructions: Preheat oven to 250F 120C. Place popped popcorn in a large mixing bowl. In a saucepan over medium heat, melt butter, brown sugar, corn syrup, and salt. Stir continuously until the mixture comes to a boil. Let it boil for 4-5 minutes without stirring. Remove from heat and stir in baking soda, pumpkin spice, and vanilla extract. Pour the caramel sauce over the popcorn and gently toss to coat evenly. Transfer the popcorn to two large baking sheets lined with parchment paper, spreading it out into an even layer. Bake in the preheated oven for 45 minutes, stirring every 15 minutes. Remove from the oven and immediately sprinkle mini marshmallows over the popcorn. Return to the oven for 2-3 minutes or until marshmallows are melted and gooey. Remove from the oven and let it cool slightly. Sprinkle candy corn and chopped pecans over the top. Allow the popcorn to cool completely before breaking it into clusters. Serve and enjoy the delicious pumpkin spice marshmallow popcorn with your family night!
