Enjoy a delicious and filling meal with these easy-to-make Black Bean and Cheese Quesadillas. Packed with flavorful ingredients, they are perfect for a quick lunch or dinner.
Ingredients: 1 can black beans, drained and rinsed. 1 cup shredded cheese cheddar or Mexican blend. 4 large flour tortillas. 1/2 cup diced tomatoes. 1/4 cup chopped red onion. 1/4 cup chopped cilantro. 1 teaspoon cumin powder. 1/2 teaspoon chili powder. Salt and pepper to taste. 1 tablespoon olive oil.
Instructions: Mash the black beans with salt, pepper, chili powder, and cumin powder in a bowl. Spread a quarter of the mashed black beans evenly over one half of a tortilla that has been placed on a flat surface. Over the beans, liberally scatter shredded cheese. Top the cheese with chopped red onion, diced tomatoes, and cilantro. Gently press down on the folded tortilla to seal the edges. In a skillet over medium heat, warm the olive oil. After placing the quesadilla in the skillet, cook it for 34 minutes on each side, or until the tortilla is golden brown and the cheese is melted. Proceed with the remaining tortillas and filling in the same manner. Serve the quesadillas hot, sliced into wedges. Serve with sour cream, salsa, or guacamole on the side, if desired.
