Recipe #55 - Quick Soup from “Easy To Make Soups and Broths” - Ministry of Food Leaflet no. 15
I’m currently fighting off a cold so I wanted something quick but wholesome and “Quick Soup” looked like it would fit the bill.
The amounts of veggies this recipe calls for are minute. Among the veggies is 2oz cabbage. So I sliced up a small amount of cabbage and weighed it and discovered it was 4oz worth! In the end I put a bit of extra veggies in there because I’d already cut them or just wanted to use up the last bit.
It’s a bit of a sparse soup, but the flavour is boosted by the Bonox in it (I also used homemade beef stock instead of water). It’s reasonable, but I think a bit more veg wouldn’t hurt it.

PEAS 'N' BASIL PESTO SOUP
600 millilitres water 2 1/2 cups (400 grams) frozen peas 2 spring onions, roughly chopped 1 tablespoon lime juice (approximately 2 limes or can use lemons) pinch of salt 4 tablespoons basil pesto sour cream to serve (optional)
Add peas, spring onions, lime juice and salt to water and boil until peas are cooked, about 5-8 minutes.
Do not drain, using a stick blender or food processor, blend together pea mixture with basil pesto.
Serve and garnish with fresh basil leaves and a swirl of sour cream.
Note: This soup can also be served cold.
