Ingredients: 2 boneless, skinless chicken breasts. 1/4 cup gluten-free Greek yogurt. 2 tablespoons gluten-free mayonnaise. 2 tablespoons fresh lemon juice. 2 cloves garlic, minced. 1/2 cucumber, grated and drained. 1 tablespoon fresh dill, chopped. Salt and pepper to taste. 4 gluten-free tortilla wraps. 1 cup lettuce leaves. 1/2 red onion, thinly sliced. 1 tomato, thinly sliced.
Instructions: Greek yogurt, mayonnaise, lemon juice, minced garlic, grated cucumber, and fresh dill should all be mixed together in a bowl. Combine well. Add salt and pepper to the chicken breasts. Set a grill or grill pan over medium-high heat to get it hot. The chicken breasts should be cooked all the way through after 6 to 8 minutes on each side. After taking the chicken off the grill, let it rest for a few minutes. Then, cut it into thin strips. You can heat up the gluten-free tortilla wraps in the oven or in the microwave. On each tortilla, put a large spoonful of the creamy tzatziki sauce. On top of the sauce, put lettuce leaves, sliced chicken, red onion, and tomato slices.
