These blackened potato wedges baked in the oven are a quick and easy side dish that only needs a few things. They taste great with any meal because the blackened seasoning gives them a smoky and spicy kick.
Ingredients: 4 medium-sized potatoes. 2 tablespoons olive oil. 2 teaspoons blackened seasoning. Salt to taste. Fresh parsley for garnish optional.
Instructions: Preheat your oven to 425F 220C. Wash and scrub the potatoes thoroughly. Cut them into wedges. In a large bowl, toss the potato wedges with olive oil, blackened seasoning, and salt until evenly coated. Arrange the coated wedges in a single layer on a baking sheet lined with parchment paper. Bake in the preheated oven for about 25-30 minutes, flipping halfway through, or until the wedges are golden brown and crispy. Once done, remove from the oven and let them cool slightly before serving. Garnish with fresh parsley if desired, and serve hot.
