This parfait is a quick and healthy treat that will satisfy your sweet tooth with a burst of fruity freshness. It's made with rich chocolate brownie, creamy Greek yogurt, and sweet mango.
Ingredients: 1 ripe mango, diced. 1 cup Greek yogurt. 1/4 cup honey. 1 cup almond flour. 1/4 cup cocoa powder. 1/4 cup honey or maple syrup. 1/4 cup coconut oil, melted. 1/2 teaspoon vanilla extract. Pinch of salt.
Instructions: Preheat the oven to 350F 175C. In a mixing bowl, combine almond flour, cocoa powder, honey or maple syrup, melted coconut oil, vanilla extract, and a pinch of salt. Mix until well combined to form the brownie batter. Spread the brownie batter evenly onto a lined baking sheet. Bake for 15-20 minutes, or until the edges are set and a toothpick inserted into the center comes out clean. Allow the brownie to cool completely, then cut it into small cubes. In serving glasses or bowls, layer diced mango, Greek yogurt, and brownie cubes. Repeat the layers until the glasses or bowls are filled. Drizzle honey on top for extra sweetness, if desired. Serve immediately or refrigerate until ready to serve.
