These Bacon Brunch Enchiladas are a delightful twist on classic breakfast enchiladas, filled with a savory combination of bacon, ham, peppers, and cheese. Perfect for a weekend brunch or any morning when you want something hearty and flavorful.
Ingredients: 6 large flour tortillas. 1 cup diced cooked ham. 1 cup diced red bell pepper. 1 cup diced green bell pepper. 1 cup shredded cheddar cheese. 1 cup cooked and crumbled bacon. 1/2 cup diced onion. 1/2 cup sour cream. 1/2 cup salsa. 4 large eggs. Salt and pepper to taste. Chopped fresh cilantro for garnish optional.
Instructions: Preheat your oven to 350F 175C. In a large skillet, cook the diced bacon until it becomes crispy. Remove from the skillet and drain on paper towels. In the same skillet, saut the diced onion, red bell pepper, and green bell pepper until they become tender. In a mixing bowl, whisk together the eggs, sour cream, and salsa. Season with salt and pepper to taste. Place a flour tortilla on a clean surface and spoon some of the sauted vegetable mixture onto it. Add a portion of diced ham, shredded cheddar cheese, and crumbled bacon on top. Roll up the tortilla and place it seam-side down in a greased baking dish. Repeat this process with the remaining tortillas and fillings. Pour the egg mixture evenly over the rolled enchiladas in the baking dish. Bake in the preheated oven for 25-30 minutes, or until the enchiladas are set and the tops are golden brown. Remove from the oven and let it cool slightly before serving.
