The flesh of the fruit turns red after a long cooking with sugar by formation of anthocyanins. The seeds may be used medicinally, as they are rich in mucilage. This mucilage has the same properties as that which is derived from linseed. A raw quince is 84% water, 15% carbohydrates, and contains negligible fat and protein (table). In a 100-gram (3+1⁄2-ounce) reference amount, the fruit provides 238 kilojoules (57 kilocalories) of food energy and a moderate amount of vitamin C (18% of the Daily Value), but no other micronutrients of significant quantity. The quince (Cydonia oblonga) is the sole member of the genus Cydonia in the family Rosaceae.
