A delicious and nutritious twist on classic enchiladas, this Cheesy Chicken Enchilada Quinoa is loaded with protein, fiber, and cheesy goodness. It's an easy one-dish meal that brings together the flavors of enchiladas with the health benefits of quinoa.
Ingredients: 1 cup quinoa. 2 cups cooked shredded chicken. 1 can 15 oz black beans, drained and rinsed. 1 cup corn kernels. 1 cup enchilada sauce. 1 cup shredded cheddar cheese. 1/2 cup chopped fresh cilantro. 1 teaspoon ground cumin. 1 teaspoon chili powder. Salt and pepper to taste.
Instructions: Rinse the quinoa under cold water and cook it as directed on the package. Put enchilada sauce, 3/4 cup of shredded cheddar cheese, cilantro, ground cumin, chili powder, salt, and pepper in a large bowl. Add the cooked quinoa and mix it all together. Combine well. Put the mixture in a baking dish and make sure it's spread out evenly. Add the last 1/4 cup of shredded cheddar cheese on top. Put the dish in an oven that has already been heated to 375F 190C and bake for 20 minutes, or until the cheese melts and bubbles. Take it out of the oven and let it cool down a bit before you serve it. If you want, you can add more cilantro as a garnish. Enjoy while still warm!
