This Cod & Chickpea Mediterranean Ragu Bowl is a tasty and healthy dish that comes from Mediterranean cooking. When you mix tender cod, hearty chickpeas, and savory tomato-based ragu, you get a meal that's perfect for any event.
Ingredients: 2 cod fillets. 1 can chickpeas, drained and rinsed. 1 onion, finely chopped. 2 cloves garlic, minced. 1 can diced tomatoes. 1/2 cup Kalamata olives, pitted and sliced. 1 tablespoon capers. 1 teaspoon dried oregano. 1 teaspoon dried thyme. 1/4 cup fresh parsley, chopped. Salt and pepper to taste. 2 tablespoons olive oil.
Instructions: Add salt and pepper to the cod fillets. Warm up the olive oil in a big pan over medium-low heat. Put in the garlic and onion, and cook them until they get soft. Olives, capers, oregano, thyme, diced tomatoes, and chickpeas should all be added. Stir every now and then for 10 minutes. On top of the ragu, add the cod fillets. Put the lid on top and cook on low heat for 8 to 10 minutes, or until the cod is done. Add some fresh parsley on top before serving. Put the ragu of cod and chickpeas in bowls to serve.
