Rainbow Cereal Treats

I told you I was into really easy recipes lately. Specifically, sugary recipes. As much of a food snob you might think I am, we all have our weakness. We. All. Do. I know some fancy pants chefs who would happily munch of Cheeze Whiz and Ritz crackers for a snack. For me, it’s anything dessert with sprinkles not matter how basic or mediocre it is. Slap some sprinkles on a brownie? Okay, I’m in. Soft serve? Hell yeah. I’m easily won with sprinkles.

For two dozen bars:

1 c. salted butter

Two 12-oz. bags marshmallows*

1 tsp. pure vanilla extract

10 c. puffed rice cereal

1/4 to 1/3 c. sprinkles

In a large non-stick pot (I used a 3 qt. pot), melt butter over medium heat. Add marshmallows and vanilla extract. Once marshmallows have mostly melted into one chunky mass, remove pot from heat. Quickly, fold in puffed rice cereal and sprinkles. Keep folding until the marshmallows are evenly incorporated into the cereal.

The amount of sprinkles I add depends on my mood. I suggest you do the same too.

*I use a mix of large and small because I like having the big chunks of marshmallows in it.

A customer came in and requested cupcakes for his friend’s birthday. The guy was turning 50 and “loved bright colors and glitter”. I began emitting a high pitch creaking sound from back in the kitchen to eloquently express my enthusiasm. My boss assured the customer that I would love to take up the order.
