What's a wonderful way to spend a cold, rainy day? Why. by making Irish soda bread, of course! Irish Soda Bread (Makes 2 loaves) 4 T. butter 3 1/4 cups all-purpose flour 1/2 cup whole wheat flour 1/4 cup rolled oats 1 1/4 t. baking soda 1 t. baking powder 1 1/2 t. salt 1 egg 3 T. honey 2 t. orange zest 1 3/4 cups buttermilk 1 cup currants 1/3 cup golden raisins Cube the butter and place it in the freezer for 10-15 minutes so it’s very cold. Combine the flours, oats, baking soda, baking powder, and salt in a large mixing bowl and stir with a fork. Cut in the butter until a coarse meal forms. Set aside. In a separate bowl, combine the egg, honey, orange zest, and buttermilk. Make a well in the center of the dry ingredients and add the wet mixture to it. Add in the currants and raisins and stir everything together until a very wet, very sticky dough forms. Turn the dough onto a well-floured surface and dust the top and your hands with enough flour to keep the dough from sticking to things. Press the dough flat, fold both engs into the center, and work it so the seams disappear and you have a soft, smooth, round ball of dough. Cut the ball in half and form each half into a smooth, round loaf. Preheat the oven to 375°F. While the oven heats, place the loaves onto a baking sheet lined with parchment paper and let them rest for 15 minutes. Before they go in the oven, take a knife and gash a large X into each loaf, cutting at least half an inch deep and cleaning the knife after each cut; this will help the bread rise while baking. Bake the loaves for 45 minutes or until they’re a deep golden brown. Let them cool before slicing.
