Ranger Cookies are made with oats, coconut, cornflakes, and chocolate chips. These cookies are ideal for satisfying your sweet tooth and make an excellent snack or dessert.
Ingredients: 1 cup butter, softened. 1 cup granulated sugar. 1 cup brown sugar, packed. 2 large eggs. 1 teaspoon vanilla extract. 2 cups all-purpose flour. 1 teaspoon baking powder. 1 teaspoon baking soda. 1/2 teaspoon salt. 2 cups old-fashioned oats. 1 cup shredded coconut. 1 cup cornflakes cereal. 1/2 cup chopped nuts pecans or walnuts. 1/2 cup chocolate chips.
Instructions: Preheat the oven to 350F 175C and line baking sheets with parchment paper. In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients and mix until just combined. Fold in the oats, shredded coconut, cornflakes cereal, chopped nuts, and chocolate chips. Drop spoonfuls of cookie dough onto the prepared baking sheets, spacing them about 2 inches apart. Bake in the preheated oven for 10-12 minutes or until the cookies are golden brown around the edges.
