gluten free lamingtons with raspberry chia jam and cacao icing
Chia Raspberry Jam
This is our jam. (For real: This is our favourite jam. You, keen reader, may have seen it here before. We invented it back in 2014, and we’ve been jammin’ ever since.) Made with just three ingredients, this sweet spread is easy enough to prepare in the comfort of your ‘jams. Chia seeds are also complete protein and an excellent digestive aid. Use it to top a morning baguette—sans or avec gluten, whichever way you are inclined—or like Joey, wear it on your face.
Ingredients: 2 ½ cups raspberries Drizzle of coconut nectar 2 ½ tbs chia seeds
Steps:
Wash your raspberries, or the fruit of your choice.
Add raspberries, along with your sweet nectar, to a medium-sized saucepan set over medium heat. Pro Tip: You can also use maple syrup or honey in place of coconut nectar.
Stir, breaking up the fruit in your pan until reaching your desired consistency. Let it come to a boil.
Taste the mixture to test its sweetness. Add more coconut nectar if needed.
Add your chia seeds, and mix for another minute.
Remove from heat and allow to cool for about ten minutes. Seal it in a mason jar, and store it in your fridge.
Get jammin’.

Day 3 of the liver cleanse meal plan and I’m really get into this! I love making stuff with chia seeds and this is no exception.
ingredients
2 tbsp chia seeds
punnet of raspberries
tsp honey

Tip the punnet of raspberries into a pan and start mashing them together as they heat up. Heat until they’ve reduced to a sauce-like consistency and stir in some honey.
Take off the heat and add 2 tbsp chia seeds. Stir thoroughly until completely combined, leave to cool and then pour into a jar and keep in the fridge for at least 1 hour.
Serve on top of coconut yoghurt with any other toppings you like.
Hey everybody! If you look really closely underneath that glorious mountain of summer berries, there's a delicious Raspberry Chia Jam. It was one of my healthy friends birthdays so I decided to use my beetroot brownie recipe (found below) and to add some extra moistness I threw together this jam - literally threw it together, it's that simple! If you've never used Chia seeds, fear not, they're so easy to use and I personally can't live without them. They come in whole form or milled, both work. I normally throw them on my porridge or into smoothies for extra nourishment, good for the bowels Yano yerself. They have a thickening ability when mixed with water - classic gelatinisation 😏. Ok I'm rambling on, here goes; Two punnets of Raspberries Two tablespoons of Chia seeds One tablespoon of water One teaspoon of honey (if desired) You literally throw it all into a bowl together, mush it all up and leave for minimum half an hour, or an hour, or overnight, whatever suits =] Then it's ready to go! You can put it on whatever you like, it's spreadable and thick and super healthy! Alternatively, you can use frozen raspberries but you'll have to thaw and drain em' off first. I haven't tried it yet but blackberries would work too, they just wouldn't be as pretty. That's the thing I love about all of this 'throw together health stuff', it's so versatile and you can change it up a bit depending on what's at hand. Hope you enjoy 😘
