But it was Death's scythe, the symbol and tool that actually does the reaping. Also, War and Pestilence and the others could be killed, why not Death?

He is Death, literally. Endlessness personified. If any of the Horsemen were to survive anything and everything, it’s Death.

It just seemed entirely too easy. It came off as less of “Dean just killed Death” and more like “Death just noped out of there because he was done with dealing with Winchester bullshit.”

And I know it’s a completely different show, but we just saw a character on OUAT that last season was literally reduced to dust like Death come back this season, so I refuse to believe that that is the end of Death. Plus I just love him, he’s one of my favorite characters.
