Homemade Aam Panna – The Perfect Summer Cooler!
Hi friends! Welcome back to the blog. Today, I’m sharing a super refreshing and nostalgic summer drink – homemade Aam Panna – made from raw mangoes with a desi twist of spices!
This drink isn’t just my favourite – it’s a crowd favourite. In fact, Aam Panna is so popular during the summer that I’ve literally had shopkeepers say "Out of stock!" year after year. So finally, I thought, why chase it when I can make it at home?
Why I Decided to Make It Myself
Aam Panna has always been one of those things that just screams summer! For the past two years, I’d head to the store craving it—only to find it sold out every single time. So I decided, enough is enough! I remembered the taste so well that I experimented at home using raw mangoes and a blend of spices. And guess what? It turned out so good that even my family asks for it now. This is the third time I’m making a concentrated version, and I just had to share it with you all!
Ingredients I Used
Raw mangoes (Kacha Meetha Aam – slightly sweet & tangy)
Green chillies (You can use red chilli powder or Kashmiri chilli powder if you prefer)
Chaat masala – ½ tsp (optional)
Jal jeera – ½ tsp (optional)
Amchur powder – ¼ tsp (optional)
Salt, sugar – to taste
Roasted cumin powder (for Punjabi flavour) or
Cardamom + saffron (for Gujarati twist)
Step-by-Step Process
1. Wash & Prep the Mangoes
First things first – being Indian, we wash everything! 😄 I thoroughly washed the raw mangoes and chillies. Then I peeled the mangoes before boiling. Some people boil first and then remove the skin – both methods work. But I like to keep my kitchen mess-free, so I peeled them first.
2. Remove the Seeds
These mangoes were soft and easy to handle, so I removed the seeds before boiling. Pro tip – don’t waste those seeds! I save them to make chutney later and suck out every bit of pulp 😋
3. Boiling the Mangoes
I used a pressure cooker – added a cup of water and let them cook for 4 to 5 whistles (around 8 to 10 minutes). You can also use a regular pan if you don’t have a cooker. Just boil till the mangoes are soft and mushy.
Once boiled, let them cool completely. Seriously – don’t rush. I joke that it feels like waiting for half a world to pass... but it’s totally worth it!
4. Blend the Concentrate
Once cooled, I added the mango pulp to a blender, along with the optional spices:
Chaat masala
Jal jeera
Amchur powder
Feel free to skip or adjust these based on your taste. For a Punjabi-style Aam Panna, just add roasted cumin (jeera) powder. For a Gujarati touch, go with elaichi (cardamom) and a few strands of kesar (saffron) – it adds a sweet, aromatic flavour.
Blend everything until smooth.
5. Storing the Aam Panna Concentrate
Once blended, I poured the concentrate into a clean glass container.
Now, here’s something important – check the thickness.
If it’s thick, it’s very concentrated – so just 1 to 2 spoons per glass of chilled water will do.
If it’s thin, add 3 to 4 spoons for a stronger taste. Adjust the sweetness or spice as per your liking while mixing with cold water.
6. One Honest Confession… 😅
Okay, I have to confess something: I was so excited to drink it that I forgot to record how it looked after mixing it with chilled water! I added 4 to 6 spoons of the concentrate into a glass of cold water… and just gulped it down! 😂
But trust me – it was perfect, tangy, slightly spicy, refreshing, and hit all the right notes!
Final Tips
You can always adjust sugar or spice levels after mixing the drink.
Store the concentrate in the fridge – it stays fresh for a couple of weeks.
Serve it chilled for the best experience – with a few ice cubes and mint leaves if you like!
