Ingredients: 1 cup cooked quinoa. 1 cup rolled oats. 1/2 cup almond flour. 1 tsp baking powder. 1/2 tsp cinnamon. 1/4 tsp salt. 2 large eggs. 1 cup almond milk. 2 tbsp maple syrup. 1 tsp vanilla extract. 1/4 cup chopped almonds for topping. Fresh blueberries for garnish.
Instructions: In a blender, combine cooked quinoa, rolled oats, almond flour, baking powder, cinnamon, and salt. Blend until smooth. Add eggs, almond milk, maple syrup, and vanilla extract to the blender. Blend until well combined. Preheat a waffle iron and lightly grease with cooking spray. Pour the batter onto the hot waffle iron and cook according to the manufacturer's instructions until golden brown and crisp. While waffles are cooking, prepare the blueberry drizzle by blending fresh blueberries until smooth. You can strain the mixture to remove seeds if desired.
