Engagement Chicken is a classic recipe that is said to bring about marriage proposals because it smells and tastes so good.
Ingredients: 1 whole chicken. 2 lemons. 1/2 cup fresh lemon juice. 1/2 cup olive oil. 3 cloves garlic, minced. 1 tablespoon dried oregano. 1 teaspoon salt. 1/2 teaspoon black pepper.
Instructions: Preheat oven to 400F 200C. Rinse the chicken inside and out, and pat dry with paper towels. Zest one lemon and set aside. Cut the zested lemon and the other lemon into wedges. In a small bowl, mix together lemon zest, lemon juice, olive oil, minced garlic, oregano, salt, and black pepper. Place the chicken in a roasting pan. Rub the lemon mixture all over the chicken, including inside the cavity. Place the lemon wedges inside the cavity of the chicken. Roast the chicken in the preheated oven for about 1 hour and 15 minutes, or until the juices run clear and the chicken is cooked through, basting occasionally with pan juices. Once cooked, remove the chicken from the oven and let it rest for 10 minutes before carving. Serve the chicken with the pan juices spooned over the top.
