These loaded mint chocolate brownies are the best way to enjoy chocolate and mint together. These brownies are rich and fudgy, and they taste like refreshing peppermint. They are decorated with rich chocolate chips and chopped Andes mints for an extra minty kick. Just what you need to satisfy your sweet tooth!
Ingredients: 200g unsalted butter. 200g dark chocolate. 1 and 1/4 cups granulated sugar. 3 large eggs. 1 teaspoon vanilla extract. 1/4 teaspoon peppermint extract. 3/4 cup all-purpose flour. 1/4 cup unsweetened cocoa powder. 1/2 teaspoon salt. 1 cup chopped Andes mints. 1/2 cup chocolate chips.
Instructions: Preheat your oven to 350F 175C. Grease and line an 8-inch square baking pan with parchment paper. In a microwave-safe bowl, melt together the butter and dark chocolate, stirring until smooth. Let it cool slightly. In a separate bowl, whisk together the sugar, eggs, vanilla extract, and peppermint extract until well combined. Gradually pour the melted chocolate mixture into the egg mixture, stirring until smooth. Sift in the flour, cocoa powder, and salt. Fold the dry ingredients into the wet mixture until just combined. Fold in the chopped Andes mints and chocolate chips. Pour the batter into the prepared pan and smooth the top with a spatula. Bake for 25-30 minutes or until a toothpick inserted into the center comes out with a few moist crumbs. Allow the brownies to cool completely in the pan before slicing and serving.
