Red Bean Walnut Tea Cake

2 tbsp egg replacer powder 6 tbsp water 1 1/2 cups brown (or white) rice flour 1 1/2 cups walnut (or almond) flour 1/2 cup coconut flour 1 cup organic cane sugar 1 tbsp baking powder 1/2 tsp sea salt 2 cups soy milk (or other non-dairy milk) 1/2 cup grape seed oil (or vegetable oil) 1/4 cup pure maple syrup 1 tbsp pure vanilla extract 1 can (475 grams) sweetened and mashed red beans Preheat oven to 350 degrees F. Grease a bundt pan with coconut oil. In a small bowl, whisk together the egg replacer powder and water. Set aside to thicken. In a large glass mixing bowl, sift together the; rice flour, walnut flour, coconut flour, cane sugar, baking powder, and sea salt. In a separate mixing bowl, whisk together the; soy milk, grape seed oil, maple syrup, and vanilla extract. Stir in the "egg" mixture. Add the wet ingredients to the dry ingredients. Using an electric mixer, mix on low speed until well-combined. Fold in the red beans. Transfer batter to prepared bundt pan. Bake in preheated oven for 60 minutes. Allow to cool completely in pan before flipping onto serving platter. Dust with powdered sugar. Serve plain or with a dollop of coconut whipped cream.
