Ingredients: 500g beef stew meat. 1 onion, chopped. 2 carrots, sliced. 2 potatoes, diced. 2 cloves garlic, minced. 2 cups red wine. 2 cups beef broth. 2 tablespoons tomato paste. 1 tablespoon olive oil. Salt and pepper to taste. Fresh thyme sprigs for garnish.
Instructions: Put olive oil in a big pot and heat it over medium-low heat. Put in the beef stew meat and brown it all over. Add the minced garlic and chopped onion and saut until the garlic smells good. Add the tomato paste and cook for two minutes. Add red wine and beef broth, and scrape the bottom of the pot to get rid of any browned bits. Salt and pepper should be added along with the sliced carrots and diced potatoes. Once it starts to boil, lower the heat, cover, and let it cook for about an hour and a half to two hours, or until the beef is soft. Add fresh thyme sprigs on top and serve hot.
