We have a modpack on modrinth that is focused around accessibility, it's not really focused on any specific thing, because it's kinda made for ourselves lol. There's mostly stuff that focuses on mobility.
auto run
auto reel-in fish
auto use/attack
auto switching tools
better autojump - jumps a whole jump and not the normal autojump amoune
tools for crafting with fewer clicks
visuals on screen for sprint toggle and crouch toggle
mod that allows you to blacklist breaking certain blocks without a specific tool
mod that allows you to open containers through signs/item frames so you don't need to aim at the weird angle under the sign/frame
mod that allows searching for an item from any chests you've already interacted with, and then that chest getting highlighted
mod that allows for stacking to nearby chests like terraria, and pulling from nearby chests
organization mod
(These aren't all the mods, but they're the ones I use the most from the pack lol)
