Curried rice and apple salad 🍚🥗🍎🥒🍃 Ingredients • 1 red apple, small dices • 1 cup cooked rice • 1/2 tsp sesame oil • 1 cup baby spinach, chopped • 1/2 cucumber, diced • 1 tsp curry powder • 1/2 tsp smoked paprika • 1 shallot, finely diced • 1 tbsp chopped fresh mint • 2 tbsp chopped fresh coriander • 2 cloves garlic, minced Method 1. Heat sesame oil in a frying pan and saute onion and garlic until softened and add in the rice, curry powder and smoked paprika. Stir fry until well combined. Remove from the frypan into a bowl and allow to cool. 2. Into the bowl add the rest of the ingredients and toss to combine. Curried Orange Rice Salad is a delightful combination of fluffy white rice, sweet and tangy oranges, crisp vegetables, and a flavorful curry dressing. This refreshing salad is perfect for a light lunch or as a side dish for picnics and barbecues.
Ingredients: 1 cup cooked white rice. 1 cup diced oranges. 1/2 cup diced red bell pepper. 1/2 cup diced cucumber. 1/4 cup chopped red onion. 2 tablespoons chopped fresh cilantro. 1/4 cup mayonnaise. 1 tablespoon orange juice. 1 teaspoon curry powder. Salt and pepper to taste.
Instructions: Fry the oranges, red bell pepper, cucumber, red onion, and fresh cilantro until they are all small pieces. Put them all in a large bowl. Whisk the orange juice, curry powder, and mayonnaise together in a different small bowl until they are well mixed. Pour the curry dressing over the rice and vegetable mix, and then gently toss everything to make sure it's all covered. Add salt and pepper to the salad to taste, and make any necessary changes. Put the Curried Orange Rice Salad in the fridge for at least 30 minutes before you serve it so that the flavors can mix. Enjoy! Serve cold.

Ingredients: 1 cup cooked chicken breast, diced. 1 cup cooked black beans, drained and rinsed. 1 cup cooked white rice. 1/4 cup fresh cilantro, chopped. 2 tablespoons fresh lime juice. 2 tablespoons olive oil. 1/2 teaspoon ground cumin. Salt and pepper to taste. Lettuce or mixed greens for serving.
Instructions: In a large bowl, combine the diced chicken, black beans, cooked white rice, and chopped cilantro. In a separate small bowl, whisk together the fresh lime juice, olive oil, ground cumin, salt, and pepper. Pour the lime-cumin dressing over the chicken and bean mixture, and toss to coat evenly. Refrigerate the salad for at least 30 minutes to allow the flavors to meld. Serve the Lime Cilantro Chicken and Black Beans with Rice Salad on a bed of lettuce or mixed greens.
