Ingredients: 1 tablespoon olive oil. 1 small onion, chopped. 2 cloves garlic, minced. 1 carrot, chopped. 1 celery stalk, chopped. 1 pound fresh salmon fillet, skin removed and cut into chunks. 4 cups chicken or vegetable broth. 1 cup heavy cream or coconut cream. 1/4 cup dry white wine optional. 1 teaspoon dried thyme. Salt and pepper to taste. Fresh parsley, for garnish.
Instructions: Set the olive oil in a big pot over medium-low heat. It will take about 5 minutes of cooking after adding the chopped onion, garlic, carrot, and celery. Putting the salmon chunks in the pot, cook for about 34 minutes, or until they get a little brown on all sides. Add the dried thyme, salt, and pepper, then the chicken or vegetable broth. Turn down the heat and let the soup cook for 15 to 20 minutes. This will give the flavors time to blend. Blend the soup until it is smooth and creamy, either with an immersion blender or by adding small amounts at a time to a blender. Add the dry white wine and heavy cream or coconut cream, and mix them in. For an extra two to three minutes, heat the soup until it's warm all the way through.
