Lucky you!! I'm up to about 65 now so I'm not that far in. I just am still scarred by the fact that I had to hatch about 2600 eggs for a shiny vulpix a couple months ago. I got the shiny charm now though, so it shouldn't take that long!
I don't think you'll get a Shaymin for a shiny fish. You should hunt in the friend safari and put a shiny from there in the gys

A shiny value is a value which determines whether or not the egg you’re gonna hatch will be shiny or not. You have a shiny value. if your egg matches that shiny value, it’ll be shiny! if it doesn’t, it won’t.

ORTrade with someone who can see your/their shiny value. If you show them the egg in a trade they’ll be able to see that egg’s sv. If you show them a pokemon that isn’t an egg, they can see your sv. hope that helps!
