This Roasted Beet and Citrus Salad with Mustard Vinaigrette is a delightful combination of earthy roasted beets, sweet and tangy citrus fruits, and the savory kick of mustard vinaigrette. Topped with feta cheese and toasted walnuts, it's a refreshing and nutritious salad that's perfect for any occasion.
Ingredients: 4 medium beets, roasted, peeled, and sliced. 2 oranges, peeled and segmented. 1 grapefruit, peeled and segmented. 1/2 red onion, thinly sliced. 1/4 cup chopped fresh parsley. 1/4 cup chopped fresh mint. 1/4 cup crumbled feta cheese. 1/4 cup chopped walnuts, toasted. Salt and pepper to taste.
Instructions: Start by heating the oven to 400F 200C. When you poke a fork into the beets, they should be soft. Wrap them in aluminum foil and roast them in the oven for about 45 minutes. While the beets are still warm, peel them and cut them into rounds. Orange and grapefruit segments, thinly sliced red onion, chopped parsley, and chopped mint should all be put in a large salad bowl. You will need to whisk the mustard vinaigrette ingredients together in a different bowl. Pour the vinaigrette over the salad and toss it gently to cover everything. Crumbled feta cheese and toasted walnuts should be put on top of the salad. Add pepper and salt to taste. Serve right away and enjoy!
