Ingredients: 2 cups blueberries. 2 tablespoons balsamic vinegar. 1/4 cup honey. 8 oz. goat cheese. 1 cup heavy cream. 1 cup whole milk. 1/2 cup granulated sugar. 1 teaspoon vanilla extract.
Instructions: Preheat oven to 375F 190C. In a baking dish, combine blueberries, balsamic vinegar, and honey. Roast for 20-25 minutes until blueberries burst and release juices. Let cool. In a blender, puree roasted blueberries until smooth. In a large bowl, whisk together goat cheese, heavy cream, whole milk, granulated sugar, and vanilla extract until smooth. Stir in the pureed blueberries until well combined. Transfer mixture to an ice cream maker and churn according to manufacturer's instructions. Once churned, transfer ice cream to a freezer-safe container and freeze for at least 4 hours or until firm. Serve and enjoy!
