The roasted plums, vanilla, and bourbon in this delicious parfait give it a lot of flavor. There are just the right amounts of crunchy granola, sweet honey, caramelized plums, and creamy Greek yogurt in this parfait.
Ingredients: 6 ripe plums, halved and pitted. 2 tablespoons brown sugar. 1 teaspoon vanilla extract. 2 tablespoons bourbon. 2 cups Greek yogurt. 1/4 cup honey. 1/2 cup granola. Fresh mint leaves for garnish.
Instructions: Warm the oven up to 190C 375F. Toss the plums with brown sugar, vanilla extract, and bourbon in a bowl until they are well covered. Put the cut side of the plums on a baking sheet and roast them in a hot oven for 20 to 25 minutes, or until they are soft and caramelized. Take the plums out of the oven and let them cool down a bit. Put Greek yogurt, roasted plums, honey, and granola in serving glasses in that order. Add more layers until the glasses are full, and then put a dollop of Greek yogurt on top to finish. Add some fresh mint leaves as a garnish. Serve right away and enjoy!
