A delightful twist on the classic S'mores with an Aussie flair, this Passionfruit Roderick Sandwich swaps traditional ingredients with AIP-friendly alternatives while introducing the exotic flavor of ripe passionfruit.
Ingredients: 2 large ripe passionfruits, halved and pulp scooped out. 4 large green banana flour tortillas AIP-friendly. 1 cup coconut cream, chilled. 1/4 cup maple syrup or honey for non-AIP. 1/4 cup shredded coconut. 1/4 cup dark chocolate chips AIP-friendly. Sea salt, to taste.
Instructions: In a mixing bowl, combine the chilled coconut cream and maple syrup. Whip until stiff peaks form. Spread a generous dollop of whipped coconut cream onto one half of each tortilla. Sprinkle shredded coconut evenly over the coconut cream. Drizzle the passionfruit pulp over the shredded coconut. Sprinkle a few dark chocolate chips on top of the passionfruit. Sprinkle a pinch of sea salt over the chocolate chips. Fold the other half of the tortilla over the filling to form a sandwich. Repeat with the remaining tortillas and filling ingredients. Heat a skillet over medium heat. Once hot, carefully place the sandwiches onto the skillet. Cook for 2-3 minutes on each side, or until the tortillas are golden brown and slightly crispy.
