This Vegan Lentil Soup is a hearty and healthy meal that's great for a cold night. It tastes great and fills you up. It's full of protein, fiber, and important nutrients. Plus it's simple to make and doesn't need many tools or ingredients.
Ingredients: 1 cup lentils. 4 cups vegetable broth. 1 onion, diced. 2 carrots, diced. 2 celery stalks, diced. 3 cloves garlic, minced. 1 teaspoon cumin. 1 teaspoon paprika. 1/2 teaspoon turmeric. Salt and pepper to taste. 2 tablespoons olive oil.
Instructions: Put olive oil in a pot and heat it over medium-low heat. Toss in the chopped onion, carrots, and celery. For about 5 minutes, or until softened, saut. Garlic powder, cumin, paprika, turmeric, salt, and pepper should all be added. Go on and cook for two more minutes. After running cold water over the lentils, add them to the pot. Put in the vegetable broth and raise the heat. Put the lid on and cook for 20 to 25 minutes, or until the lentils are soft. If necessary, change the seasoning. Serve hot, and if you want, top with fresh herbs.
