Spaghetti Alla Carbonara
Last night’s episode of the Coronavirus Cooking Diaries Featured the Roman classic, Cacio e Pepe or Cheese and Pepper pasta. The ingredients of the pasta are simple and easy to find and include black pepper, olive oil, grated Pecorino Romano cheese, and spaghetti. All the ingredients are pantry staples in my household, which make the dish quick, easy, practical and delicious! It was a favorite of shepherds because the ingredients were light and easy to carry in the fields. You can use any type of pasta to make this but a rough-surfaced pasta is works best in order for the sauce to adhere well to the pasta. Toast some cracked fresh ground pepper in a heavy bottom pan for a minute or two until fragrant. Add a little olive oil and butter, combine all, when the pasta is close to done add on pasta water and grated Pecorino Romano cheese, throw in pasta and mix. Add a touch more butter and add pepper to taste on top. Bingo, Bango, Bongo! It’s that simple and easy! Happy cooking!! Amatriciana Roman pasta :) This is a classic pasta that is absolutely delicious to eat, full of meaty and hearty Roman tomatoes flavours, nicely finished with an emulsion of pecorino cheese and a spicy kick of cracked black pepper. Now, if only restaurants and cafes would do beautiful classic pastas like this instead of wasting time on gimmicks, then everyone will get to know how a proper Italian pasta dish should taste like.
