This is #caijibonelessduck #braisedduck and lemme say, it is one of the absolute best. It's history is 60 years old and it shows in the meticulous and thorough braise and proper flame to get the braising liquid to a superb reduction of herbs and spices. Totally boneless, the duck itself is still tender yet a nice bite and any gamey hint is obliterated by the tasty sauce and braising liquid which retained a soft brown tea like colour.
