I am in such a good mood, we should do crack. - Akil.
Going to dinner with the roomies, not feeling pretty at all though. But we dressed up to go to Kobe's as a roommate dinner. Putting on a smile anyways.
Roommate Dinner: Artichokes n' Good Folks
One thing I am thankful for? My roommates and our family-style dinners. Instead of blogging about some overdone time and time again post-Thanksgiving recipe, I am going to talk about one of our most successful (and delicious) meals: artichokes.
Artichokes are one of those foods that I have always loved, but never take the time/energy to cook for myself. After recently reviving my love for this vegetable, I think I will begin to prepare these more often!

What you need:
2-4 whole artichokes (depending on how many you're serving- each person should have their own choke)
3 tablespoons butter
2 cloves garlic, sliced
salt & pepper
Cook your choke:
Fill the pan with just enough water to cover bottom. Bring to a full boil over high heat. While water is heating, trim and discard the stems and tough outer leaves of artichokes. Tuck slivers of butter and slices of garlic into artichoke leaves.
When water is boiling, place steamer insert in pot and set artichokes in steamer, stem-side down. Cover pot with lid and allow artichokes to steam for approximately 20 minutes, until tender.
Eat your heart out! And I mean literally eat the artichoke heart: With a knife or spoon, scrape out and discard the inedible fuzzy part (called the "choke") covering the artichoke heart. The remaining bottom of the artichoke is the heart. Cut into pieces and dip into sauce to eat.

Foolproof Pork Roast in the Crockpot
So Alex calls me...I mean texts me :), and asks What spices do you put it in the crockpot with a pork roast ?
I answer back, I'm surprised you knew what type of pork to buy.
Yeah, well, I need to know that too, he says. A bunch of guys are eating with us in our apartment tonight. I want an easy way to feed them all.
OK, let's get basic.
To feed 4-6 people
Grocery List
5lb Pork Shoulder
7 Carrots
1 Large white onion
8 small potatoes
Beef Broth
Get out the frying pan, and brown the roast on all sides.
Alex-"WAIT, brown? "
Get out the frying pan, turn up the heat to medium-high and sprinkle each side of the roast with salt and pepper. Add some olive oil to the pan (a tablespoon, or so). Then let each side of the roast change color from red/translucent to brown. This will sear in the juices and make the meat look good, since the crockpot wont color it.
Put roast in the crockpot with carrots(peeled and left whole), onion(only cut into 4 wedges)and potatoes all on top and around the sides.
Add 3/4 cup water or beef broth. Cover. Cook on the HIGH setting for one hour, if possible, then
Cook it on LOW for 8 hours. Longer is okay.
If you can't do the HIGH hour, then cook it on the LOW setting for 9 hours or longer.
THIS WILL BE VERY TENDER, like, pull it apart with a fork, tender. the veggies will be perfect. The juices, delicious as they are poured over the meat and veggies for serving.
The guys will think you are a genius.
