One year ago I met this snuggly, goofy, absolute love bug and officially adopted her 💕
It’s no exaggeration to say that she is my little savior. I was in a bad place last year and she was (and still is) a reason I fight against the darkness every day. Her love is unconditional and she knows how to get me out of my head when it’s a bad day. One look, one snuggle of her head against me, one little happy dance is all it takes.
Love you Rosiebear. We’ve had one year full of firsts and adventures and lots of love and treats. Here’s to many many many more.
Rosie the attempted thief has struck again.
She, once again, snagged a toy from the toy bins next to the check out lanes and then tried to run for the door with it. She knows the power of her cuteness and uses it to her full advantage. Yes, we came home with a witch head shaped pillow thing that she loves for some odd reason. Add it to her ever growing collection of stuffies she likes to carry around.

But Vegans only eat rabbit food?!
So apologies for my lack of posting; it’s been rather hectic between Christmas and New Year! However I used my time well, prepping for going all out on my Vegan mission from the 1st on wards (I can’t believe its the 3rd already?!).
One of the main things I have found since I decided to go vegan was most people said “but what will you eat?” When I got tired of saying food (*roll eyes*) I began to ponder the question myself.
My mother was cooking a gammon for my boyfriend and his family and was in a quandary about what to cook me. She didn’t want me to feel like I was missing out by having a salad and no roast potatoes so she cooked me up an amazing vegan feast!
Mum’s proper pie and veg - who says being a vegan means not eating “normal food” (again cue the *eye roll*)
Roast Potatoes
The roasties were AMAZEBALLS! Fluffy on the inside and crispy on the outside. How is this possible without butter or goose fat?! (Gross FYI). Coconut oil and olive oil. It’s the future. Lower cholesterol and good for animals. All round winner winner (non-chicken dinner).
Mash!
Fluffy potatoes whipped up by my man himself with an amazing spread from the Pure Dairy Free Range manufactured by Kerry Foods (shameless plug I work with them in the day job and had to give them a mention!) http://puredairyfree.co.uk/products I would definitely give them a look - the potatoes were lovely (I cannot lie they were not as creamy as normal but they tasted all the better knowing they were better on the waste line and cruelty free!)
Vegetables of a root variety
Parsnips, Carrots (tiny ones) and Red Onions cooked in coconut oil (you seeing a theme guys?) with brown sugar. I know that in some circles sugar is a touchy subject however I am still researching in to this. Normally I would use honey but now that is out of bounds I wanted an alternative. (so frikkin tasty!!)
Peas
Not much I can say here guys.... boil em. Put em on ya plate. I did use a dollop of my pure dairy free spread though!
THE PIE
Holy moly, Linda McCartney should get a knighthood. My mum nipped to old Morribobs down the road and picked me up the Vegetarian Country Pies from the frozen range. THEY ARE AMAZING. Being a pie fiend, this definitely ticked all the boxes. This was my first taste of soya mince and I wasn’t thinking wow this tops a pie minister (shout out to Leeds folks) filling however soya is going to be an acquired taste.

I’m not going to lie, there have been times recently where I have wanted to cave and eat my weight in Nando’s chicken... (mmmmm..... mango and lime dressing - which flavour are you?!) but then I reminded myself of why I was doing it.... I look at my beautiful Rosie and think of all the animals that suffer for the sake of a meal or a cosmetic product and I know I am doing the right thing.
