Tasting my spiced, rolled pork for #breakfast with the obligatory pickled beetroot. (Swedish rullsylta). A piece of belly pork with the skin removed, except for one long side, a mixture of salt, crushed allspice, yellow mustard seeds, peppercorns, crumbled mace is rubbed in and then it’s rolled up and tied tightly together with string, simmered for two hours with a chopped onion, more black peppercorns, allspice and a bay leaf or two.
