the Second figgy duff I made. I found my mixing bowl worked very well in place of using a pudding bag, or cloth to boil. I filled a large pot with the water below the bowl. Turned out magnificent. I made rum butter sauce.

Toast or crackers go perfectly with rum butter that has lots of spice, especially during the holiday season.
Rum Butter
Hot cross buns call for lashes of butter; that’s just how it is. Consequentely, these marvelous Tropical Hot Cross Buns call for lashes of this delightful Rum Butter (you deserve it after all, after beating that butter by hand!). Have a very, very good Good Friday indeed, friends!
Ingredients (makes 1 1/3 cup):
6 ounces unsalted butter, softened at room temperature
1/2 cup pure cane sugar
1/4 cup packed dark brown sugar
1.5 fluid ounces (3 tablespoons) good quality dark rum (like the very good Bologne Rum we brought back from Guadeloupe)
In a medium bowl, combine softened butter, cane sugar and dark brown sugar. Cream energetically with a wodden spoon until mixture becomes fluffy, smoother and a pale brown color, for a good 10 minutes. Gradually beat in dark rum, until well-blended and nicely whipped.
You can serve Rum Butter with a slice of Rum Nicky, or even with your Christmas Pudding instead of Brandy Butter; but is is just pure delight on these just-out-of-the-oven Tropical Hot Cross Buns!
