Rum Old Fashioned
The Old Fashioned, the very definition of a classic, but more than that, it is a template on which to build. I personally enjoy modifying the traditional recipe, subbing in various syrups, bitters, and liquors. The rum old fashioned is one of my favorite variations, and this rendition is potentially the most delicious of the ones I’ve tried. Enjoy when you want a sweet spin on a classic.
2 oz of Zaya rum (You can use any aged or blended dark rum, but Zaya is my preference.)
0.5 oz Simple syrup
3 dashes orange bitters
1 dash aromatic bitters (angostura preferred, feel free to do two instead, but I like to keep the orange bitters dominant).
Garnish with an orange peel.
Mix the bitters and syrup in a chilled old fashioned glass. Add one large ice cube. Add rum, stir until cold. Fold and press the orange peel between your fingers to release the oil from it, run it along the edge of the glass then drop it in.
Rum Old Fashioned
I love when rum is paired up with other distinctive, cutting flavours! Raisins, Vanilla, Cola... Lime! I bloody love Rum and lime! On a recent outing I talked a bartender through four pretty dreadful old Fashioneds. There wasn’t any sweetness, no garnish and the poor girl didn’t have a bar spoon so the drinks weren’t very well mixed. Bitters and Whisky over ice. I liked it all the same because I love bitters... and Whisky. My drinking buddies disagreed. Much later, I went home and made three very involved, very precise Old Fashioneds with all the trimmings and went to bed content that I knew how to make them correctly and that the booze cupboard at home was perfectly stocked for any emergency. The next day whilst nursing a hangover over a late lunch with Ammy, I mentioned that I’d seen a recipe for a Rum Old Fashioned somewhere. I mentioned that it supposedly walked that fine line between sweet and lemony sharpness that cut through the deep Rum sugary flavour. I remember saying during a pint of cold cola and a fish-finger sandwich that orange would be a great pairing and that I needed to get my mitts on some orange bitters to make it work. Good news everybody! It works just fine!
The To-Do List: Mix 20ml of simple syrup with 5 dashes of Angostura Orange Bitters over one or two blocks of ice. Add more ice and stir in 25ml of Havana Añejo Especial for about a minute. (The glass should be ice cold on the outside by then.) Add another two to three blocks of ice plus 25ml of Havana Añejo Especial and stir for a further minute. Peel a good amount off of an orange and with the rind facing upwards away from the glass bend the peel lengthways in half. (This sprays the drink with oil from the oranges peel) Rub the shiny side around the rim of the glass then roll into a coil and pop into the centre allowing it to unfurl in between the ice. Breathe in through you nose, sip and enjoy! Cheers!
September 25 - Rum Old Fashioned ...
I make this one every once in a while. The key is to use a nice, long-aged, dark rum with a lot of flavor and a whole ton of bitters. I'm not saying my recipe is the best, but I'm not NOT saying that!
2.5 oz. Aged Rum (Diplomático Reserva Exclusiva)
.5 oz. Simple Syrup
Dash Aromatic Bitters (Fee Brothers)
Dash Creole Bitters (Peychaud's)
Dash Orange Bitters (The Bitter Truth)
Dash Another Orange Bitters (Fee Brothers)
Combine all ingredients in a rocks glass and stir thoroughly. Add ice. Stir more. Garnish with a big chunk of orange zest.
