Ingredients: 200g unsalted butter, softened. 100g granulated sugar. 2 large egg yolks. 250g all-purpose flour. 1/2 teaspoon baking powder. Pinch of salt. Zest of 1 lemon. 1 teaspoon vanilla extract.
Instructions: In a bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the egg yolks, one at a time, mixing well after each addition. Mix in the lemon zest and vanilla extract. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Form the dough into a disc, wrap it in plastic wrap, and chill in the refrigerator for at least 1 hour. Preheat the oven to 350F 175C and line a baking sheet with parchment paper. Roll out the chilled dough on a floured surface to about 1/4-inch thickness. Use cookie cutters to cut out desired shapes and place them on the prepared baking sheet. Bake for 12-15 minutes, or until the edges are lightly golden. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
