Indulge in the perfect blend of sweet and smoky flavors with this Traeger Wood Fired Grill Smoked Salmon Candy recipe. A delightful treat that will impress your guests at any gathering.
Ingredients: 2 lbs salmon fillets, skin-on. 1 cup brown sugar. 1/2 cup kosher salt. 1/4 cup maple syrup. 2 tbsp crushed black pepper. 1 tbsp garlic powder. 1 tsp onion powder. 1 tsp cayenne pepper.
Instructions: To make the dry rub, combine the brown sugar, kosher salt, crushed black pepper, onion powder, garlic powder, and cayenne pepper in a bowl. Arrange the salmon fillets onto a tray and generously apply the dry rub mixture to both sides of the fish. To cure, place it in the refrigerator for at least an hour. Set the temperature on your Traeger Wood Fired Grill to 225F 107C. Use apple or cherry fruitwood pellets for a subtle smokey flavor. Take the salmon out of the fridge and drizzle each fillet with maple syrup to create a delicious glaze. Smoke the salmon for two to three hours, or until its internal temperature reaches 145F 63C, by placing it directly on the grill grates. After smoking, give the salmon a few minutes to rest before slicing it into pieces the size of candies. The savory and sweet Smoked Salmon Candy is ready to be served.
