Salmon ceviche is a tasty and refreshing appetizer that can be served at any time. Because citrus juices are acidic, they "cook" the salmon, making it tender and full of flavor. You can make a dish that will impress your guests and make them want more with just a few simple ingredients.
Ingredients: 1 lb fresh salmon fillet, skinless and boneless. 1 cup lime juice. 1/2 cup orange juice. 1 red onion, finely diced. 1 jalapeno pepper, seeded and minced. 1/4 cup cilantro, chopped. 1 avocado, diced. Salt and pepper to taste.
Instructions: Take the salmon and cut it up into little cubes. Cut up the salmon and put it in a bowl. Add the orange juice, red onion, jalapeno pepper, and cilantro. Add pepper and salt. Put the dish in the fridge for at least 30 minutes with the lid on to let the flavors mix. Add the diced avocado slowly before serving. Serve cold, and if you want, top with more cilantro.
