Scroll right! Here’s the steps to make the salmon stock! Add the the mirepoix with butter then add the shiitake and green onion. Simmer until soft and add the collars! I added some mirin in this step but you can also add sake. Add two quarts of water and simmer for another 10 minutes. Make sure to scoop the fatty foam off the top.
