Asian-style grilled salmon wrapped in lettuce served with jasmine rice and grilled pineapple makes a tasty and filling dish that is great for a BBQ.
Ingredients: 8 salmon fillets. 1 pineapple, peeled and sliced. 2 cups cooked jasmine rice. 16 large lettuce leaves. 1/2 cup soy sauce. 1/4 cup hoisin sauce. 3 tablespoons honey. 2 tablespoons rice vinegar. 2 cloves garlic, minced. 1 tablespoon ginger, grated. 2 tablespoons sesame oil. Salt and pepper to taste. Sesame seeds and green onions for garnish.
Instructions: Preheat the grill to medium-high heat. In a small bowl, whisk together soy sauce, hoisin sauce, honey, rice vinegar, garlic, ginger, sesame oil, salt, and pepper to create the marinade. Place the salmon fillets in a shallow dish and pour half of the marinade over them. Let it marinate for at least 30 minutes. Grill the marinated salmon fillets for about 4-5 minutes per side, or until cooked to your liking. While grilling the salmon, brush pineapple slices with the remaining marinade and grill until they have nice grill marks, about 2-3 minutes per side. Once the salmon is cooked, flake it into bite-sized pieces with a fork. To assemble the wraps, place a lettuce leaf on a plate, add a spoonful of cooked jasmine rice, top with grilled salmon, and a grilled pineapple slice. Garnish with sesame seeds and chopped green onions. Repeat for the remaining wraps. Serve immediately and enjoy!
