A colorful and refreshing salad with corn, black beans, and a tangy lime-cumin dressing. It's great for a light dinner or as a side dish at picnics and BBQs.
Ingredients: 1 can 15 oz black beans, drained and rinsed. 1 cup frozen corn, thawed. 1 red bell pepper, diced. 1/2 red onion, finely chopped. 1/4 cup fresh cilantro, chopped. 1/4 cup olive oil. 2 tablespoons lime juice. 1 teaspoon cumin. Salt and pepper to taste. 1 avocado, diced optional.
Instructions: Put the corn, red bell pepper, red onion, cilantro, and black beans in a large bowl. Mix the cumin, salt, pepper, olive oil, and lime juice together in a different small bowl. Add the dressing to the salad and mix it all together. You can gently fold in the diced avocado if you want to. Put it in the fridge for at least 30 minutes before you serve it. Enjoy it cold!
