This salted watermelon ice cream is a refreshing treat with a perfect balance of sweetness and subtle saltiness, making it ideal for hot summer days.
Ingredients: 4 cups diced seedless watermelon. 1/2 cup granulated sugar. 1/4 cup lemon juice. 1/4 teaspoon sea salt. 1 cup heavy cream.
Instructions: Using a blender, blend the watermelon cubes until they are smooth. To get rid of the pulp, strain the puree into a bowl through a fine-mesh sieve. Stir the sugar, lemon juice, and sea salt into the watermelon puree until the sugar is gone. Whip the heavy cream in a different bowl until stiff peaks form. Fold the whipped cream into the watermelon mixture slowly until it is well mixed. Fill a small dish with the mixture. Freeze it for at least 4 hours, or until it gets firm.
