#WhiteTruffleGelato and the battle of sweet and savory We don't realize it but our #palates are #brainwashed when it comes to what should taste #sweet, and what should taste #savory, and it really screws with your mind when you take a white truffle and make it sweet or take vanilla and use it savory. Here I made a coarse sea salted raw whipped cream with vanilla beans and paired it with a white truffle gelato, but I didn't stop there. I also took #concordgrapes and cooked them down with a bitter #Barolochinato #amaro, but I didn't stop there either, I made a very intensely extracted #basiloil and combined all of it into one #dessert with shaved truffles on top.
